New FSA guidance on E.coliO157 Control of cross-contamination – Feb 2011
Adjustments to the new ‘Butchers Food Safety Management System (HACCP based)’ are underway to ensure the pack is completely up to date with new guidance issued by the Food Standards Agency earlier this month on E.coliO157 Control of cross-contamination. Adjustments are being made across 4 of the Food Safety Rules sections in the pack and include new guidance for separation of raw and ready-to-eat foods; specifically regarding separate complex equipment, separate clean work areas and separate uniforms / aprons. Adjustments are also being made relating to handwashing techniques and official standards to be met for disinfectants and sanitisers. Updated packs will be available in March with free replacement pages made available to butchers who have implemented packs before the new guidance was issued.
